fried pork in spicy sauce

450 gr pork
5 shallots
3 cloves garlic
1 tsp trassi
2 jeruk purut / kaffir lime leaves
2 tbsp palmsugar
1 lime (juice)
200 ml water
200 ml santen asli (thick coconut milk)
2 tbsp kecap benteng manis (dark sweet soy sayce)
salt to taste
4 tbsp oil


1/2 tsp ketumbar (coriander)
4 kemiri (candlenuts)
3 cm laos (galangal)
2 red lomboks (large chilies)
1/2 tsp jinten (cumin)
1 cm sereh (lemongrass)

Cara membuat:
Cut the meat into cubes. Slice the shallots and the garlic fine. Pound or grind the ingredients for the bumbu into a paste. Heat in a wok the oil and fry the meat brown. Then add the shallots and the garlic and fry it for 3 minutes. Add the bumbu, the jeruk purut, the palmsugar, the lime juice, the trassi and the water and let it simmer until the meat is cooked. Then add the salt, the kecap and the santen and let it simmer slowly for 4 minutes more.
