Sekba Babi
stewed pork with sayur asin

500g porkshoulder ribs
1500 ml water
2000 ml water
3 cloves
3 star anise
1 tsp peppercorns
1/2 tsp nutmeg
1 tsp salt
1 tsp palm sugar
2 tbsp kecap manis
2 tbsp kecap asin
2 tbsp black vinegar
3 tablespoons oil
6 cloves garlic
2 shallots
400g tahu/tofu
300g sayur asin (salted cabbage/preserved green mustard)
8 hard-boiled eggs
450g potatoes
Cara membuat:
Heat in a pan 1,500 ml of water along with the meat and simmer gently for 30 minutes. Scoop out the flesh and cut it into pieces. Mince the garlic and cut the shallots into thin slices. Cut the tofu and the potatoes into small cubes. Cut the sayur asin into pieces.
Heat in a pan the 2000 ml of water together with the meat, cloves, star anise, pepper, nutmeg, salt, palm sugar, kecaps and vinegar and bring to a boil.
Heat in a pan the oil and fry the shallots and garlic for 3 minutes and add it to the meat. Add the tahu, the sayur asin, the eggs and the potatoes and let it simmer gently for 30 minutes until meat and potatoes are tender.
