Ayam bumbu ruiak
chicken in ruiak sauce

1 chicken (1200 gr)
3 shallots
3 cloves garlic
3 cm jahe (ginger)
3 jeruk purut / kaffir lime leaves
5 kemirie (candlenuts)
1 tbsp tomato puree
2 tbsp gula java (palmsugar)
½ tap salt
400 ml santen (coconut milk)
2 tbsp oil

Cara membuat:
Roast the chicken for 20 minutes slowly above a charcoalfire. cut the shallots and the garlic coarsly. Grate the jahe and the kemiries. Heat in a wok the oil and fry the shallots, the garlic, the jahe, the kemiries, the gula java, the jeruk purut leaes for 2 minutes. add the tomato puree, the salt and the chicken and fry the chicken golden brown. Add the santen and let it simmer slowly until the sauce has thickened and the chicken is cooked.
