Ayam Masak di Belanga
spicy chicken in a clay pot

1 chicken
1 tsp salt
2 tbsp lime juice
3 tbsp oil
1/2 kunyit leaf (turmeric)
1 pandan leaf
4 jeruk purut / kaffir lime leaves
2 sereh (lemongrass)
4 green lomboks
3 salam (basil)

7 red rawits
2 red lomboks
5 cm kunyit
5 cm jahe (ginger)
7 shallots
4 cloves garlic
2 tomatoes
1 tsp salt

Cara membuat:
Slice the chicken into small pieces and the kunyit leaf, the pandan leaf and the jeruk purut very fine. Slice the green lomboks coarse and the spring onions into 2 cm long pieces. Pound or grind the ingredients for the bumbu fine into a paste. Rub the chicken in with the salt and the lime juice and let it marinate for 10 minutes.
Heat in a clay pot the oil and fry the paste for 3 minutes. Add the chicken, the kunyit leaf, the pandan leaf, the jeruk purut leaves and the sereh and fry it for 3 more minutes. Add enough water to cover the chicken and let it simmer slowly until its half cooked. Add the green lomboks, the sprin onion and the salam and let it simmer slowly until the sauce has thickened.
