duck in red pepper sauce

1 duck
1 asam gelugur (carcinia)
450 ml water
3 tbsp oil
7 shallots
3 cloves garlic
1 sereh (lemongrass)
2 star anise
2 green cardamon
1000 ml santen cair
5 curry leaves

15 red lomboks
1 1/2 tbsp ketumbar (coriander)
1 tsp jinten (cumin)
2 cloves
5 kemiri (candlenutes)
2 cm cinnamon
2 tsp white poppy seed
6 cm kunyit (turmeric)
6 cm jahe (ginger)
5 shallots
3 cloves garlic
1 tsp salt

Cara membuat:
Soak the asam gelugur in the water for 30 minutes and rub the duck in with it together with the salt. Let it rest for at least 30 minutes. Cut the duck into 8 pieces. Roast the kemiri, the jinten and the colves dry in a skillet. Pound or grind the ingredients for the bumbu fine into a paste and mix it with the duck. slice the garlic and the shallots fine.
Heat in a wok the oil and fry the shallots and the garlic for 3 minutes. Add the duck, the sereh, the star anise and the cardamon and fry it until all fluid have evaporated. Add the santen and the curry leaves and let it simmer slowly until the duck is cooked and the sauce has thickened.
