Gulai Itik Hijau
duck in a green chili sauce

1 duck (1200 gr)
2 sereh (lemongrass)
3 asam kandis
5 jeruk purut / kaffir lime leaves
750 ml water
3 tbsp oil

15 green rawits
10 shallots
5 cm jahe (ginger)
5 cm kunyit (curcuma)
5 cm laos (galangal)
2 tsp pepper
8 kemiri (candlenuts)
salt to taste

Cara membuat:
Roast the kemiri dry in a skillet. Pound or grind the ingredient for the bumbu into a paste. Cut the duck into large pieces. Heat in a wok the oil and fry the bumbu, the sereh and the jeruk purut for 3 minutes. Then add the duck, the asam kandis and the water and let it simmer slowly for 2-3 hours until the meat is tender and the sauce has thickened.
