Ayam Kari Jawa
mild Javanese chicken curry

1200 gr chicken
2 tsp salt
7 shallots
250 ml santen cair (thin coconut milk)
3 tbsp oil

4 cloves garlic
4 cm kunyit (curcuma/turmeric)
1 tsp ketumbar (ground coriander seeds)
1/2 tsp jinten (cumin)
2 cm laos (galangal)
1/2 sereh (lemongrass)
1 red lombok

Cara membuat:
Pound or grind the ingredients for the bumbu into a paste. Cut the shallots into thin slices. Cut the chicken into pieces and rub these in with the salt. Heat in a wok the oil and fry the chicken golden brown and remove them. Fry the shallots for 2 minutes and add the paste and fry it for 1 minute more. Then add the chicken and the santen and let it simmer until the chicken is done.
