Ayam Santan
Chicken with coconut

1 chicken (750 gr)
7 shallots
2 cloves garlic
4 red lomboks (large chilies)
3 cm laos (galangal)
1 sereh (lemongrass)
4 jeruk purut / kaffir lime leaves
4 salam leaves
150 gr grated coconut
salt to taste
1 tsp palmsugar
1 lime (juice)
150 ml water
6 tbsp oil

Cara membuat:
Cut the chicken into pieces and rub it in with the lime juice. Pound or grind the laos into a paste. Cut the shallots, the garlic and the lomboks fine. Heat in a pan the water and cook the chicken for 10 minuten and then drain.
Heat in a wok the oil and fry the chicken golden brown. Remove the chicken and let it drain on kitchen paper. Add the shallots and the garlic and fry it for 3 minutes. Then add the lomboks, the laos, the sereh, the salam, the jerut purut, the salt and the palmsugar and fry it for 3 minutes. Add the grated coconut and fry it until golden brown. Then add the chicken and fry it for 5 minutes until the coconute has turned dark brown.
