Sate Ambal
chicken satay with a spicy sauce of tempe

400 gr chicken thighs
3 tbsp kecap manis
4 tbsp oil
30 satay skewers

3 kemiri/candle nuts, roasted
3 cloves of garlic
1 tbsp ketumbar, roasted
1/2 tsp jinten, roasted
1 cm jahe
1 tbsp palm sugar
1/2 tsp salt
1 tbsp bawang goreng

Bahan saus:
sauce ingredients:
200 g tempe, steamed
5 shallots
4 cloves of garlic
5 red lomboks
1 tsp palm sugar
1 tsp salt
200ml water

Cara membuat:
Cut the meat into small cubes. Pound or grind the ingredients for the bumbu into a paste. Mix the meat with the kecap, the bumbu and the oil and let it marinate for at least 20 minutes. Then thread the meat onto the skewers and roast them brown and done over a charcoal fire. Baste regularly with the marinate.
Pound or grind the tempe, the shallots, the garlic, the lomboks. the palm sugar and the salt into a paste. Then add the water and bring it to a boil while stirring.
Spoon the sauce over the satay and serve.
