Tumis kangkung bunga pepaya
fried kangkung with papaya flowers

100g papaya flowers
3 bunches kangkung (water spinach)
1cm jahe
2 stalks lemongrass
100g smoked tuna
5 jeruk purut
2 bunches kemangi
1 tsp salt
1 tsp palm sugar
100 ml of water
1 tbsp oil
7 shallots
4 red rawits
1cm kunyit
Cara membuat:
Cut the kangkung into pieces and shred the tuna. Pound or grind the ingredients for the bumbu fine into a paste. Sprinkle papaya with salt, knead, rinse and do this 4 times. Heat in a pan water and cook the papaya. Drain and repeat with fresh water.
Heat in a pan the oil and fry the paste with lemongrass and jahe for 3 minutes. Add the tuna and stir. Add the papaya, the kangkung, the jerut purut and kemangi leaves and fry until the vegetables begin to soften. Then add the salt and palm sugar followed by the water. Let the mixture gently stew until done.
