Singgang Ayam
roasted chicken stewed in spiced coconut milk

1 broiler
1 cinnamon stick (6 cm)
4 cloves
5 jeruk purut leaves
1/2 kunyit leaf
2 serai/sereh/lemon grass
400 ml almost thick coconut milk (agak kental)
300 ml thick coconut milk (Kental)
3 tbsp oil

5 cloves of garlic
5 shallots
6 red lomboks
1/2 tsp pepper
1/2 tsp jinten
1/2 tsp caraway seeds
1 tsp ketumbar
2 cm kunyit
3 cm jahe
2 cm lengkuas/laos
3 kemiri/candlenuts

Cara membuat:
Cut the chicken into 4 pieces. Pound or grind the ingredients for the bumbu into a paste. Heat the oil in a pan and fry the bumbu together with the cinnamon, the cloves, the jeruk purut, the serai and the kunyit leaf for 6 minutes. Then add the chicken and fry until it changes color.
Then add the almost thick coconut milk and cook on low heat until nearly dry. Then add the thick coconut milk and cook until dry.
Remove the chicken with the herbs/spices from the pan and roast it over a charcoal fire until golden brown.
