Timbungan Betutu Siap (Bali)
spiced roasted chicken
ingredients:
1 chicken
8 shallots
6 cloves of garlic
3 red lomboks
2 cm lengkuas / laos / galangal
3 salam leaves
6 jeruk purut leaves
1/2 nutmeg
3 cm kunyit
6 red rawits
2 cm jahe
3 cm kencur
4 cloves
1 tbsp salt
1 bamboo tube
5 tbsp oil
banana leaf
bumbu:
4 kemiri nuts
1 tsp terasi / trasi
1 tsp of pepper
1 tsp ketumbar
Cara membuat:
preparation:
Cut the shallots and garlic into thin slices . Cut the lomboks into thin rings and chop the rawits finely. Grate the kunyit and the kencur. Pound or grind the ingredients for the bumbu fine until
a pasta. Cut the chicken in half but not through and then flatten it (butterfly).
In a pan, heat the oil and fry the bumbu with the other herbs for 6 minutes. Then fill the chicken with the spices. Place the chicken with the herbs in the tube and seal it with banana leaf. Then steam the chicken for 30 minutes.
Then take the chicken out of the tuber and then roast it over a charcoal fire until brown.
