Tortang Talong
Aubergine Omelette
Ingredients:
4 Asian aubergines / terong ungu
4 eggs
1 tsp pepper
1/2 tsp salt
oil
Preparation:
Pierce the aubergines and roast them in the oven or over a charcoal fire until they have softened and the skin is charred. Then let them cool and remove the skin, but leave the stem attached. Then mash/platten the aubergine.
Beat the eggs with the pepper and salt. Heat oil in a pan. Dip the aubergine in the egg and then fry it in the oil for 5 minutes until golden brown.
