Bebek Goreng Penyet
fried duck with sambal terasi

1 duck
2 salam leaf
6 jeruk purut leaves
2 serai / sereh / lemongrass, white part
1000 ml of water

6 shallots
6 cloves of garlic
5 cm kunyit, roasted
4 cm jahe/ginger
2 tsp ketumbar, roasted
1 tsp salt

Bahan sambal terasi:
ingredients sambal:
6 red cabai keriting (curly cayenne pepper), roasted
4 red rawits, roasted
2 shallots, roasted
4 cloves of garlic, roasted
1 tsp terasi / trasi bakar
1 tomato, roasted
1/2 tsp salt
1 tsp palm sugar

Cara membuat:
Cut the duck into 4 pieces. Remove the veins from the jeruk purut. Pound or grind the ingredients for the bumbu into a paste.
Heat the water in a pan together with the bumbu, the salam, the serai and the jeruk purut and bring to the boil. Then add the duck and cook until done. Then scoop it out of the pan and let it cool down.
Heat in a pan the oil and fry the duck until brown and crispy. Then roll the duck through the sambaL and serve.

Pound or grind the ingredients for the sambal into a paste.
