Gulai Ayam Surakarta
chicken stewed in coconut milk

1 chicken (1000 gr)
3 jeruk purut leaves
3 cm of cinnamon
2 cloves
2 cardamom, crushed
1 serai / sereh / lemongrass
1/2 nutmeg
1/2 tbsp salt
50 gr grated coconut, roasted
1000 ml coconut milk (from 1 coconut)
2 tbsp asam water
4 tbsp oil
optional: 300 gr potato, cubes

7 shallots
5 cloves of garlic
10 red lomboks
1 tbsp ketumbar, roasted
5 cm lengkuas / galangal / laos
4 cm kunyit
4 cm jahe
1 tsp pepper
1/2 tsp jinten, roasted
1/4 tsp caraway seeds

Cara membuat:
Cut the chicken into 8 pieces. Pound or grind the ingredients for the bumbu into a paste. Pound or grind the grated coconut until the oil is released.
Heat the oil in a pan and fry the bumbu together with the jeruk purut, the cinnamon, the cloves, the cardamom, the serai, the nutmeg and the salt for 6 minutes. Then add the chicken and fry until the chicken is half-cooked.
Then add the grated coconut, the asaam water and the coconut milk and cook the chicken over low heat until the sauce thickens. Optionally, the potatoes can be added at this step.
