Rajang Ayam
chicken in a spicy red sauce from Lombok

750 gr chicken
9 shallots
3 salam leaves
3 cm lengkuas / galangal
4 tomatoes
250 ml of hot water

6 red lomboks
6 red rawits
4 cloves of garlic
1 cm kunyit
2 cm jahe
1 tsp palmsugar
2 tsp salt

Cara membuat:
Heat in a pan of water and blanch the tomatoes. Remove the skin and then puree the tomatoes. Cut the chicken into pieces and the shallots into thin slices. Pound or grind the ingredients for the bumbu into a paste.
Heat in a pan of oil and fry the shallots for 3 minutes. Then add the bumbu, the salam and the laos and fry for 5 minutes. Then add the chicken and fry it until it changes color.
Then add the tomatoes and mix well. Then add the water and cook until tender and the sauce thickens.
