Ayam Masak Hijau
stewed chicken in green sauce from Banjarmasin

500 gr chicken
1 lime, juice
2 jeruk purut leaves
2 serai / sereh / lemongrass, white part
250 ml of water
2 tbsp asam water
2 tsp palmsugar
1 tsp salt

4 shallots
4 cloves of garlic
9 green lomboks
2 cm jahe
2 cm lengkuas / galangal
1 cm kunyit
1 cm kencur

Cara membuat:
Cut the chicken into pieces. Cut the serai into thin slices. Pound or grind the ingredients for the bumbu into a paste.
Heat in a pan of oil and fry the chicken brown and set aside. Heat in a pan of oil and fry the bumbu together with the serai and the jeruk purut for 5 minutes. Then add the water and bring to the boil and let the sauce thicken. Then add the salt and the palmsugar and mix well.
Then add the chicken and mix well. Then let it simmer slowly until the chicken is cooked and until the sauce has thickened / evaporated.
