Fragrant fried spicy chicken

1 chicken
4 jeruk purut leaves
2 salam leaves
1/2 tsp pepper
1 tbsp salt
500 ml of water

4 shallots
4 cloves of garlic
3 tsp ketumbar
3 cm kunyit
3 tomatoes
12 red rawits
11 red lomboks
1 tsp trassi
3 tsp palm sugar
10 sprigs of kemangi / lemon basil

9 cloves of garlic, chopped and fried

Cara Membuat:
Cut the chicken into 10 pieces. Cut the tomatoes into pieces. Heat in a pan 5 tablespoons of oil and fry the tomatoes, the rawits and the lomboks. Then pound or grind the ingredients for the bumbu into a paste.
Heat in a pan the water together with the bumbu, the salam, the jeruk purut, the pepper and the salt and bring to the boil. Then add the chicken and cook it gently until done and the sauce has thickened. Remove the chicken.
Heat in a pan sufficient oil and deep-fry the chicken until golden brown and drain. Spoon the sauce over the chicken and sprinkle the fried garlic on top.
