Ayam Suwir Kemangi

1 chicken
5 twigs kemangi
2 cm laos/galangal
2 jeruk purut/kaffir lime leaves
100 ml coconut milk
1 teaspoon salt
2 tablespoons of oil

3 kemiri/candlenuts
6 shallots
4 cloves of garlic
2 cm jahe
2 cm kencur
2 red lomboks

Cara Membuat:
Cut the chicken into 4 parts and cook in water and until tender. Remove the chicken from the pan and cut into thin strips. Pound or grind the ingredients for the bumbu into a paste, and the grate the galangal.
Heat in a pan the oil and fry the bumbu with the laos and the jeruk purut for 4 minutes. Then add the chicken and mix well. Then add the coconut milk and simmer gently until the sauce thickens. Then add the kemangi and simmer slowly until the liquid has evaporated.
