Ayam Pinadar
peppery chicken from North Sumatra

1 chicken (1 kg)
2 tbsp grated coconut
100 ml of water
4 jeruk purut
3 salam leaves
1/2 tsp salt
4 tablespoons oil
6 kemiri nuts
5 red chilies
4 red rawits
4 shallots
3 cloves garlic
2 serehstengels
2cm jahe
2 tsp white pepper
2 tbsp andaliman pepper (otherwise Sichuan pepper)
1 chicken liver
Cara membuat:
Grill or broil the chicken over a charcoal fire all around without being burned. Cut the chicken into pieces. Pound or grind the ingredients for the bumbu fine into a paste.
Heat in a pan the oil and fry the paste until its fragrant (4 minutes). Add the chicken, the coconut, the salam, the jeruk purut, salt and water and mix well. Let it simmer slowly with the lid on top, until the chicken is cooked and the sauce has thickened.
