Sayap Ayam Tumis daun kedondong
fried chicken wings in a fresh sauce
6 chicken wings
3 cloves garlic
2 green chilies
2 red chilies
400ml coconut milk
2 sprigs kedondong (Ambarella sheet, otherwise sorrel)
1 tsp salt
1/4 teaspoon pepper
1/2 tsp palm sugar
3 belimbing / starfruit
1 tbsp oil
Cut the wings in two. Cut the garlic and the shallots into thin slices and the chilies into thin rings. Cut the belimbing into slices.
Heat in a pan the oil and fry the shallots, garlic and chilies for 4 minutes. Then add the chicken and cook for 2 minutes. Add the coconut milk, the kedondong, salt, pepper and the palm sugar and bring to the boil. Add the belimbing and simmer gently until the sauce has thickened.
