Roasted chicken - 五香烤鸡

1 chicken (1800 g)
2 tsp salt
1 tsp five spice powder
1/2 tsp pepper (white)
1 clove of garlic
1 1/2 tsp dark soy sauce
1 tsp Shaoxing rice wine
1 tsp honey

Cut the chicken open but do not cut through. Then flatten the chicken. Mash the garlic and mix with the five spice powder, salt and pepper. Rub the inside of the chicken with half of the mixture.
Mix 1 teaspoon of dark soy sauce with the rice wine and rub it over the outside of the chicken. Then rub the outside of the chicken with the remaining spice mixture. Then leave it to rest for at least 12 hours.
Heat an oven to 200C°, place the chicken on a rack with some water underneath and roast it for 15 minutes. Then lower the temperature to 160°C and then roast it for another 20 minutes. Then remove the chicken from the oven.
Mix the honey with 1/2 teaspoon soy sauce and baste the chicken. Return the chicken to the oven and roast it for another 5 minutes. Raise the temperature again to 200 C° and baste the chicken again with the honey mixture and roast it for 5 minutes until done.
Remove the chicken from the oven and let it rest for 10 minutes. Then cut the chicken into pieces and serve.
