Gan Chǎo Niu Hey 干炒 牛 河
fried noodles with beef
ingredients:
450g ho fun (fresh wide rice noodles)
250g runvlees
200g bean sprouts
2 tsp black bean paste
7 cloves garlic
3 cm jahe/ginger
4 spring onions
1 shallot
4 tablespoons oil
Marinade:
1 tbsp kecap
2 tbsp rice wine
1 tablespoon baking soda
2 tsp cornflour
Sauce:
2 tbsp kecap asin
2 tsp kecap manis
1 tbsp rice wine
Salt 1/2 thel
1 tsp palm sugar
garnish:
2 sprigs coriander/cilantro
1 tsp seamolie
Preparation;
Chop the garlic and the black beans fine. Cut the jahe. Cut the spring onions and the shallots into thin strips. Cut the meat into thin strips and mix with the ingredients of the marinade and let it stand for a few hours.
Heat in a wok 2 tbsp oil and fry the garlic, the jahe, chives and shallots for 3 minutes. Add the meat and cook until brown and tender. Spoon the pan.
Add the remaining oil and fry the noodles briefly. Then add the bean sprouts, the black beans and the ingredients for the sauce and cook briefly. Add all the ingredients and mix them together well. Garnish with the cilantreo and sprinkle the sesame oil on top serve.
