fried sweet potato balls

4 sweet potatoes
125 gr flour
75 gr cassave starch flour
150 gr icing sugar
1 tsp salt
75 ml thick coconut milk
2 tsp bicarbonate raising agent

Peel the potatoes and steam them until they are cooked. Mash the potatoes. Mix the sugar, the salt, the cassave starch, the flour and the raising agent and mix this with the mashed potatoes. Mix in the coconut milk to form a thick dough. Let it rest for 1 hour. Then form small marble sized balls from the dough. Heat in a wok the oil and deep-fry the balls until cooked.
