Hoy Mang Pu Lourk
Mussels / clams
Ingredients:
1000 gr mussels / clams
5 cloves garlic
16 coriander leaves
2 tbsp oil
water
Ingredients sauce:
3 cloves garlic
3 red lomboks (large chilies)
3 green rawits (small chilies)
2 tbps nam pla (fish sauce)
1 lime (juice)
Preparation:
Put the mussels into a pan filled with water and let in stand for 45 minutes. Chop the coriander leaves and the garlic. Drain the mussels. Heat in a wok the oil and fry the garlic for 30 seconds. Add the mussels and the coriander leaves. Cover the wok and let it cook for 2 minutes until the mussels are opened and cooked. No need for added water.
Preperation sauce:
Chop the lomboks,the rawits and the garlic very fine and mix it with the lime juice and the fishsauce. Sprinkle it on top of the mussels or serve it on the side.
