Gai Pad Khiaowan
fried chicken with green curry
Ingredients:
500 gr chicken breast
20 basil leaves
4 tbsp santen asli (thick coconut milk)
3 tbsp green curry (see recipe)
3 tbsp palm sugar
3 tbsp fish sauce (nam pla)
9 red rawits
Garnish:
10 basil leaves
1 tbsp oil
1 tbsp sweet chili sauce
Preperation/method:
Slice the chicken into thin strips. Slice the rawits into thin strips. Heat in a wok the santen and stir in the curry paste. Add the chicken and fry it for a short period. Then add the palmsugar and the nam pla en fry the meat done. Then mix in the basil leaves.
Mix the basil with the sweet chili. Heat in a pan the oil and fry the basil crispy. Garnish the meat with it and serve.
