Gai Tod Pud Pad
spicy red chicken

400 gr chicken
1 tbsp red curry paste
1 tbsp nam pla (fish sauce)
1 tsp palmsugar

4 red rawits (small chilies)
4 kaffir lime / jerut purut leaves
5 sweet basil leaves

Cut the chicken into pieces. Heat in a wok the oil and deep fry the chicken and put it on a plate. Heat in a wok 1 tbsp oil and add the curry paste and fry it for 2 minutes. Then add the chicken, the palmsugar, the nam pla and stir fry it for 30 seconds. Put it on a plate and garnish it with julienne sliced rawits and the basil and lime leaves.
