Beef Stew With Star Anise
more a soup then a stew
Ingredients:
1000 ml chicken stock (see recipe)
500 gr beef steak
4 cloves garlic
3 coriander roots
2 cinnamon sticks
4 star anise
2 tbps kecap asin (light soy sauce)
2 tbsp fishsauce (nam pla)
1 tsp palmsugar
125 gr beansprouts
garnish:
1 spring onion
small bunch coriander leaves
Preperation/method:
Cut the meat very fine and chop the garlic and the corinader roots. Heat in a wok/pan the stock and add the meat, the garlic, the coriander roots, the cinnamon, the star anise, the kecap, the nam pla and the palmsugar and let it simmer slowly for 30 minutes. Divide the beansprouts over serving bowls and pour the stew over it. Chop the spring onuion and the coriander leaves and sprinle it over the stew and serve.
