Fried Curried Pumpkin

100 gr yellow pumpkin
75 gr minced pork
2 tbsp yellow curry paste (see recipe)
150 ml coconut milk
100 ml water
1 tbsp cane sugar
2 tbsp light soy sauce
3 garlic cloves
2 tbsp vegetable oil

Cut de pumpkin intit bite sized pieces. Chop de garlic fine and form small balls of the minced pork. Heat in a wok the oil en fry the garlic for a few secons. Add the coconut milk and the curry paste. Stir well. Add then the pork, the pumpkin, the sugar, the soy sauce and the water en let it simmer for a few minutes until its cooked
