pancakes with sweet coconut filling
100 gr rice flour
150 santen asli (thick coconut milk)
1 tbsp sugar
salt to taste
125 gr palmsugar
50 ml water
75 gr grated sugar
1 pandan leave
Beat the eggs and mix in the rice flour, the sugar, the salt and the coconut milk. Heat in a pan the water and melt in it the palmsugar, mix in the coconut and the pandan leave. Let it slowly simmer for 5 minutes and let it cool down. Remove the pandan leave.
Bake in a frying pan very thin pancakes from the egg mixture using a little oil. Put on some of the filling and roll it up. Repeat until done and serve.
