black beef soup from East Java
Bahan-bahan:

400 grams of beef shank
1500 ml water
6 jeruk purut / kaffir lime
1 lemongrass stalk
1 spring onion
1 tablespoon salt
1/2 teaspoon pepper
3 tsp palm sugar
1 tbsp asemwater
2 tbsp oil

4 cloves garlic
5 keluak / kluwek
1 cm kunyit
4 kemiri /candlenuts

100g bean sprouts
6 eggs

Cara membuat:

Cut the meat into 2 cm small pieces and the spring onions into pieces. Pound or grind the ingredients for the bumbu fine into a paste. Heat in a pan the oil and fry the bumbu with lemongrass and jeruk purut for 4 minutes. Add the meat and cook briefly.
Then add the water with the pepper, palm sugar, salt and asemwater and gently cook until the meat is tender. Stir in the spring onions and divide the soup over six bowls. Spread the topping/garnish over the bowls and serve.
