Soto Ayam Gurih
hearty chicken soup

1 chicken
5 serehstengels / lemongrass
10 jeruk purut / kaffir lime
2 tsp salt
1 tsp palm sugar
2500 ml water
2 tablespoons oil
11 shallots
9 cloves garlic
8 kemiri nuts
5cm kunyit
2cm jahe
3 eggs, cooked
150g cabbage
2 stalks celery
1 spring onion
50 g ration / glass noodles, soaked
Sambal Cabai rawit
Cara membuat:
Cut the chicken into pieces. Pound or grind the ingredients for the bumbu fine into a paste. Heat in a pan the water, add the chicken and bring to a boil. Heat in a pan the oil and fry the paste with lemongrass and jeruk purut for 5 minutes and add it to the chicken. Add the salt and palm sugar and cook until tender. Remove the chicken from the pan and fry briefly until crisp and shred the chicken.
Slice the cabbage, celery and spring onion finely and eggs into wedges. Serve the soup with chicken, eggs, cabbage, celery, the spring onion, the noodles and the sambal to taste.
