Sambal Goreng Paprika
fried bell peppers

250 gr bell peppers (red and green)
3 shallots
2 cloves garlic
1 tsp sambal trsi (see recipe)
2 cm laos (galangal)
1 tsp palmsugar
1 sereh (lemongrass)
1 salam leaf
125 ml santen asli (thick coconut milk)
salt to taste
2 tbsp oil

Cara membuat:
Pound or grind the shallots, the garlic, the laos, the sambal, the salt and the palmsugar fine into a paste. Slice the bell peppers in small strips. Heat in a wok the oil and fry the paste for 3 minutes. Add the peppers, the sereh, the salam and the santen and let it simmer slowly until the peppers are cooked but firm.
