Semur Terong
eggplant braised in sweet spicy sauce

300 gr eggplant
1 serai/sereh/lemon grass
2 salam leaf
4 tbsp kecap manis
1 tbsp oyster sauce
1 tsp salt
1 tbsp palm sugar
1/2 tsp pepper
100ml water

4 cloves of garlic
3 shallots
5 red lomboks
3 kemiri/candlenuts
1 tsp ketumbar
1/2 tsp nutmeg

Cara membuat:
Cut the eggplant into strips. Heat the oil in a pan and fry the eggplant briefly and then let it drain. Pound or grind the ingredients for the bumbu into a paste.
Heat 3 tbsp oil in a pan and fry the bumbu for 4 minutes. Then add the serai and salam and mix well. Then, add the kecap, the oyster sauce, the salt, the palm sugar, the pepper and the water and bring it to the boil while stirring.
Then add the aubergine/eggplant and cook gently until the sauce has thickened and the aubergine/eggplant is done. Serve.
