papaya in spicy sauce

1000 gr papaya, unripe
1 lemon grass, crushed
5 salam leaves
3 jeruk purut / kaffir lime leaves
500 ml water
salt to taste
4 tbsp oil

6 shallots
4 cloves garlic
3 red large chilies
5 red rawits (small chilies)
1 tsp ketumbar (coriander)
1 tsp trasi (shrimp paste)
2 tsp white pepper
1 tsp black pepper
2 cm kencur (bitterroot)
4 cm kunyit (curcuma)
4 cm laos (galangal)

Cara membuat;
Pound or grind the ingredients for the bumbu into a paste. Peel the papaya and cut it into long strips. Heat in a wok the oil and fry the bumbu for 3 minutes. Then add the lemongrass, the salam, de jerut purut, the water, the papaya and the salt and let int simmer slowly for 20 minutes until the papaye turned soft.
