Opor Bebek
in coconut milk cooked duck
Bahan-bahan:
ingredients:
1 duck
2 salam leaves
2 jerut purut leaves / kaffir lime
500 ml thin coconmut milk (santen cair)
4 tbsp oil
Bahan-bahan isi:
ingredients filling:
225 gr cirime / gooseberries
3 shallots
5 candlenuts
4 cloves garlic
1 tbsp coriander seeds
1 cm laos (galangal)
1 tsp trassi (shrimp paste)
salt to taste
1/2 tbsp cumin
Cara membuat:
preperation/method:
Cut the kidneys and the hart of the duck fine. Pound the laos, the candlenuts, the lomboks ans the garlic fine into a paste. Cut the shallots and the cirime fine. Mixh this with the remaining ingredients for the filling and the chopped kidneys and hart and fill the duck with the mixture. Close of the duck.
Heat in a wok the coconut milk with the salam and the jerut purut. Then add the duck and let it simmer for 45-60 minutes until its done. Heat in a skillet the oil and fry the duck golden brown. Laddle the sauce over the duck and serve.
