Pare Santan Cabai Hijau
cucumber in a light spicy coconut milk sauce

3 pare / bitter cucumber
1 tsp salt
2 salam leaves
4 green chilies
500 ml santen cair
1/2 tsp salt
1/2 tsp palm sugar
2 tbsp oil
3 candlenuts
5 shallots
3 cloves garlic
1/2 tsp kerumbar
1/2 tsp pepper
1 cm galangal
Cara membuat:
Cut the pare into pieces and remove the seeds. Knead the pare with the salt and rinse off. Cut the chilies in slanting rings. Pound or grind the ingredients for the bumbu fine into a paste.
Heat in a pan the oil and fry the paste with the salam for 3 minutes. Add the chilies and pare, and fry it gently until soft. Add the santen, salt and the palm sugar and bring it slowly to the boil. Serve.
