mixed pickled vegetables from Kalimantan

Bahan-bahan:
ingredients:
10 garter / snake beans
150g bean sprouts
5 bunches ubi / cassava leaves
2 bunches kangkung
200g grated coconut
water
3 tablespoons oil
 
Haluskan:
bumbu:
6 shallots
5 cloves garlic
2cm kencur
5 red lomboks / large chilies
1 teaspoon shrimp paste
1/2 tsp asem
1 tsp palm sugar
1 tsp salt
 
Cara membuat:
preparation:
Cut all vegetables into pieces except the bean sprouts. Heat in a pan the water and cook the vegetables, then drain and cool. Pound or grind the ingredients for the bumbu fine into a paste. Heat in a pan the oil and fry the bumbu for 3 minutes. Add the coconut and cook for 3 more minutes.
Mix the vegetables and the paste with the coconut, mix well and serve.
