Kari Ayam Kapitan
Chicken Curry in spicy sauce

8 drumsticks
1 tsp kunyit
8 jeruk purut / kaffir lime leaves
1 potato (300 gr)
2 tsp salt
2 tsp palm sugar
2 tspfish sauce
200 ml coconut milk
500 ml water
1 lime, juice
6 tbsp oil

25 dried lomboks, soaked and seeded
4 shallots
5 cloves garlic
3 cm jahe
3 cm laos
3 sereh / lemon grass, white portion
4 kemiri / candelnuts
125 ml water

Cara Membuat:
Pound or grind the ingredients for the bumbu intto a paste. Cut the potato into small pieces / parts.
Heat in a pan the bumbu with the kunyit and fry it quite dry. Add the oil and mix and fry until the oil starts to separate. Then add the chicken and mix well. Then add the jeruk purut and the water and bring to the boil. Then let it simmer for 10 minutes.
Add the coconut milk, the potato, the salt, the palm sugar and the fish sauce and mix well. Simmer for 25 minutes until the sauce has tickened. Then spoon in the lime juice and simmer for a further 1 minute until done.
