2 shallots
6 cloves garlic
3 tbsp arachide oil
900 gr beef
2 veal or beef harts
700 gr veal tongue
450 gr beef tripe
8 red lomboks (large chilies)
2 tbsp salt
6 cm kunyit (turmeric)
6 cm ginger
1 tsp jinten (cumin)
1 1/2 tsp ketumbar (coriander)
3 cm laos (galangal), bruised
4 kaffir lime / jerut purut leaves
2 salam leaves
5 cm cinnamon
2 lemon grass, bruised
225 ml water
800 ml coconut milk
bamboo skewers

Bahan-bahan saus:
ingredients sauce:
450 ml coconut milk
225 gr rice flour
2 tsp salt
1/2 tomato

Cara membuat:
Slice the shallots and the garlic thinly. Pound the lomboks and the kunyit into a paste. Cut the beef into large chunks, quarter the hearts, the tripe and the tongue. Slice the ginger thinly.
Heat in a wok the oil and fry the shallots and the garlic for 2 minutes. Then add all the remaining ingredients except the coconut milk and let it simmer covered for 90 minutes. Then add the coconut milk and let it simmer for 30 minutes.
Mix the rice flour and the coconut into a thin paste and add it to the sauce and add the tomato and the salt and let it simmer for 10 minutes. if the sauce becomes too thick add a bit of water.
Slice the meat into small cubes. Put the various meats on the skewers and roast them brown above a charcoal fire and serve it with the sauce on top
