Sambal belut jeruk Limau
sambal made of small eels / nematodes

250g small eels / swamp nematode
2 cloves garlic
20 red rawits
7 red lombok
2 tsp salt
1/4 tsp palm sugar
1000 ml water
1 tbsp lime juice
3 tablespoons oil
Cara membuat:
First soak the eel in the water with 1 1/2 tsp salt for 1 hour. Heat in a pan the oil and fry the eel until cooked and then drain. Chop the eel fine. Pound or grind the garlic, the rawits, the chilies, salt and palm sugar fine to a coarse paste. Mix in the eel and lime juice.
