Nasi Goreng Hijau Gurih
savoury green fried rice
Bahan-bahan:
ingredients:
250 g rice
300 ml coconut milk (from 1/2 coconut)
100 gr spinach + 100 ml of water (pureed)
1/2 tsp salt
3 salam leaf
3 serai / sereh / lemongrass, white part
2 pandan leaf
oil
bumbu pelengkap:
1 tsp fish sauce
1/2 tsp salt
1/2 tsp pepper
2 eggs, beaten
250 gr shrimp, peeled but with tail
75 gr mixed vegetables (corn, carrot, snow peas)
Haluskan:
bumbu:
4 shallots, roasted
5 cloves of garlic, roasted
4 kemiri nuts, roasted
1 tsp ebi, roasted
Cara membuat:
preparation:
Heat in a pan the coconut milk together with the spinach water, salt, salam, serai and pandan and bring to the boil while stirring. Then add the rice and cook until the moisture is absorbed. Steam the rice for 45 minutes until done. Set aside.
Pound or grind the ingredients for the bumbu into a paste. Heat the oil in a pan and fry the bumbu for 5 minutes and place it on the side of the pan. Then add the eggs and scramble it. Then add the shrimp and fry until they change colour.
Then add the rice and vegetables and mix well. Then add the fish sauce and pepper and fry until done.
