Kambing Masak Asam Pedas
stewed beef / lamb in spicy sauce

1000 gr lamb rack or beef ribs
3000 ml of water
5 tbsp kecap manis
1 tsp sauce Sambal (see recipe)
2 sereh / lemongrass
3 salam leaf
4 cm laos
2 tbsp asamwater
4 tbsp oil

3 cm jahe
2 cm kunyit
1/2 tsp pepper
2 tsp salt
5 cloves of garlic
5 shallots
4 red lomboks
5 red rawits
4 kemiri/candlenuts
1 tomato
1 tsp palm sugar

Cara Membuat:
Pound or grind the ingredients for the bumbu to a paste. Heat in a pan the oil and fry the bumbu together with the laos, the sereh and the salam for 4 minutes. Add the meat and fry until it changes colour.
Add the water and bring to the boil. Then add the kecap, the sauce Sambal and the asam water and cook it slowly until tender and done.
