jicama cookies/fritters

200 gr bengkuang (jicama or parsnip)
100 gr flour
1 egg yolk
1 spring onion
1 tsp salt
1/2-1 tsp pepper
1/2 tsp sugar
oil

Cut the bengkuang into strips. Beat the egg yolk and slice the green of the srping onion fine. Mix all ingredients very well. Heat in a wok the oil and fry 1 tbsp of the mixture golden brown and flatten it a bit. Drain on kitchen paper and serve.
