Ikan Bumbu Bali

500 gr cod or red snapper
3 cloves garlic
3 shallots
2 red lomboks (large chillies)
2 tomatoes
1 tbsp kecap manis (dark sweet soy sauce)
150 ml water
2 salam leaves (else bay leaves)
2 jerut purut leaves (else kaffir lime leaves)
rice flour

1 cm laos (galangal)
1 cm ginger (jahe)
1/2 tsp trassi (shrimp paste)
2 tsp palmsugar (gula jawa)
1 lemon grass

Cara membuat:
Dive the fish into four fillets. coat the fillets with the rice flour. Heat in a wok/wadjan the oil and fry the fillets golden brown and set aside. Ground the ingredients for the bumbu into a paste. Deseed the lomboks and slice them into strips. Slice the shallots and the garlic very fine and the tomatoes into small pieces. Heat in a wok/wadjan 3 tbsp oil and fry the shallots, the garlic and the lomboks for 3 minutes. Then add the bumbu and fry it for 2 minutes. Add the remaining ingredients and the fish and let it simmer slowly for 15 minutes. Serve.
