Ikan Bumbu Mas Kuning
fried carp with spicy sauce

500 gr carp
150 ml santen asli / thick coconut milk
5 red rawits
3 jeruk perut leaves
2 salam leaves
5 spring onions
1 lime
1 tsp vinegar
1/2 tsp salt
9 dries lomboks
11 shallots
3 cloves garlic
3 cm kunyit/curcuma
2 cm jahe/ginger
1 tomato
Cara membuat:
Pound or grind the ingredients for the bumbu fine into a paste. Rub the fish in with the salt and the lime juice and let it rest for 15 minutes. Heat in a wok/wadjan the oil and fry the fish until brown and tender and drain. Cut the spring onions into thin strips.
Pour out the oil but leave 3 tbsp oil. Fry the paste for 5 minutes and add the jeruk purut, the salam, the santen and the onions and heat the mixture until the sauce starts to cook. Add the rawits, salt and vinegar and let the sauce thicken gently. Pour the sauce over the fish and serve.
