Sambal Petai Udang
shrimps in spicy coconutmilk sauce
Bahan-bahan:

500 gr large shrimps
30 peteh beans
500 ml santen cair (thin coconut milk)
2 potatoes
1 carrot
2 red lomboks
2 tbsp asemwater
1 tbsp palmsugar
1 tsp salt
2 tbsp oil
Haluskan:
bumbu:
4 red rawits
5 shallots
4 cloves garlic
1/2 tsp trasi bakar (roasted shrimp paste)

2 tbsp bawang goreng (fried shallots)

Clean the shrimps. Cut the potatoes and the carrot into small slices. Deseed the lomboks and slice it into thin strips. Pound or grind the ingredients for the bumbu into a paste.
Heat in a wok the oil and fry the bubmu for 3 minutes. Add the peteh and the santen and let it cook slowly. Add the potatoe, the carrot, the lomboks and the asemwater and let it simmer slowly until nearly done. Add the shrimps and cook it for 3 minutes. Then add the salt and the palmsugar. Sprinkle the bawang goreng on top and serve.
