Udang Tumis Sayuran
fried shrimps/prawns with vegetables
300 gr large shrimp/prawns
50 gr peas
3 cloves of garlic
3 serai / sereh / lemongrass, white part
3 jeruk purut leaves
1 green tomato
1/2 tsp salt
1/2 tsp pepper
1/2 tsp palm sugar
1 tsp asam water (from 1/2 tsp asam jawa + 1 tbsp water)
250 ml of water
1 spring onion
Clean the shrimp/prawns and peel them but leave the tail on. Cut the carrot, shallots and garlic into thin slices. Cut the tomato into pieces and the spring onion into pieces. Cut the serai finely.
Heat in a pan of oil and deep-fry the shrimps quickly and set aside.
Heat in a pan 3 tbsp oil and fry the shallots, the garlic, the serai and the jeruk purut for 3 minutes. Then add the tomato and the carrot and fry until soft.
Then add the shrimp/prawns and the peas and fry until the shrimps change colour. Then add the water and bring to the boil.
Then mix in the asam water and the spring onion and fry until done. Serve.
