Udang Goreng Serai
fragrant fried shrimps

500 gr large shrimp/prawns
4 serai / sereh / lemongrass
1 salam leaf
2 jeruk purut leaves
1 tsp asam water
150 ml of coconut water
2 red lomboks
2 tbsp oil

3 cloves of garlic
4 shallots
1 tsp ketumbar
1/2 tsp salt
1/2 tsp pepper
1/2 tsp palm sugar
1 cm jahe
1 cm kunyit, roasted

Cara membuat:
Clean the shrimp. Cut the serai into thin slices. Deseed the chilies and cut into thin strips. Heat in a pan of oil and fry the lomboks until crispy and set aside. Pound or grind the ingredients for the bumbu into a paste.
Heat in a pan the coconut water together with the serai, the salam, the jeruk purut and the asam water and bring to the boil. Then add the prawns and cook them for 2 minutes and scoop out of the pan.
Heat the oil in a pan and fry the bumbu with the remaining marinade for 3 minutes, then add the shrimps and fry for 2 minutes while stirring. Sprinkle the fried lomboks on top and serve.
