Woku Ikan Kakap
spicy and fried fish from Manado

1000 gr red snapper / or firm white fish
1 lime
1 tsp salt
3 lemongrass 
2 pandan leaves
6 jeruk purut
5 green tomatoes / tomatillos
1 tomato
1000 ml water
4 tbsp oil
7 shallots
4 cloves garlic
9 red chilies
7 red rawits
6 cm jahe
3 cm kunyit
4 kemiri /candlenuts
2 spring onions
1 bunch kemangi / lemon basil
Cara membuat:
Clean the fish and cut it into 10 pieces. Cut the tomatoes into parts/pieces. Pound or grind the ingredients for the bumbu fine into a paste and cut the spring onions into small pieces. Marinate the fish with the lime juice and salt for at least 30 minutes.
Heat in a pan the oil and fry the paste with the lemongrass, the pandan and the jeruk purut for 5 minutes. Add the fish and mix well. Then add the water and bring to a boil. Add the tomatoes and simmer slowly for 30 minutes until done. Garnish the dish with the spring onion and kemangi leaves and serve.
